How small are they?  Taking a ruler, you’ll measure about an inch from one side of the shell hinge to the other.  That’s small, but the burst of briny goodness from the meat is refreshing and distinct.

You must try this recipe!

We’ll call this recipe “Bubbly, Buttery Garlic Clams.”  A crisp champagne coupled with butter and garlic soak into the briny clams for a refreshing oceanic burst of goodness!

Get your ingredients together.

50 Littlenecks, I cup champagne, 4 TBS melted butter, 4 garlic cloves, lemon wedges.

Get Cooking!

  1. Scrub the clams under cold water. 
  2. In a stockpot, bring the champagne to a boil and introduce the clams to the pot.  Let the clams steam in the liquid for five minutes.
  3. Meanwhile, prepare ramekins filled with melted butter and minced garlic lightly sprinkled on top. 
  4. Promptly serve on a tray with excess champagne poured in the tray to keep the clams hot. 
  5. Prepare plates with lemon wedges and allow guests to dig in!
